New food hygiene legislation came into force on 1 January 2006; it includes mandatory micro-organism limits for certain foods (Microbiological Criteria for Foodstuffs – Commission Regulation (EC) No 2073/2005). The legislation applies to all UK food businesses, including those involved in retail and catering.
